Glazed Blueberry Swim Biscuits

These glazed blueberry buttermilk swim biscuits have fresh blueberries throughout and are topped with a sweet vanilla glaze for the perfect touch. These are great to serve for breakfast.

Notes

  • Use a digital food scale for measurement accuracy of ingredients

  • I recommend to place a baking sheet underneath the pan to catch butter if it bubbles over

  • Once wet and dry ingredients are combined, it should form a sticky shaggy/lumpy dough.

INGREDIENTS

Biscuits

  • 430g All-Purpose Flour

  • 65g (⅓ cup) Granulated White Sugar

  • 12g (1 tablespoon) Baking Powder

  • 10g (2 teaspoons) Fine Sea Salt

  • 16 fluid oz (2 cups) Whole Buttermilk

  • 230g (1 ½ cup) Fresh Blueberries

  • ½ cup (1 stick/ 113g) Unsalted Butter, melted & cooled

Vanilla Glaze

  • 130g (1 cup approx.) Powder Confectioners Sugar

  • 3 tablespoons Whole Milk

  • 1 teaspoon Vanilla Extract

Recommended Equipment

  • 9x9 inch baking pan

  • Digital Food Scale

INSTRUCTIONS

1. Preheat the oven to 450ºF 

2. In a large mixing bowl, sift in flour and whisk in baking powder, sugar, and salt.

3. Next, make a well in the center of the bowl and pour in buttermilk. Gently stir together with dry ingredients in the bowl until just combined. I recommend using a wooden or silicone spatula to mix ingredients together until combined. Be sure to not over mix. The dough should still be a little sticky, as we're looking to form a sticky shaggy/lumpy dough. Then, gently fold in the blueberries into the dough.

4. Pour room temperature melted butter into a 9x9 inch baking dish. Add dough to the baking dish and spread out evenly. The melted butter from the bottom of the pan will begin to rise to the top after adding in the dough mixture; use a basting brush to brush some of the butter across the top of the biscuits.

5. Use a knife to cut biscuits into 3 rows of squares. Should have 9 total pieces. 

6. Bake for about 25-30 minutes, until the biscuits are golden brown and done. 

7. While baking, we can make the vanilla glaze. In a bowl add in confectioners sugar followed by whole milk and vanilla. Whisk together continuously until well combined. 

8. After baking, allow biscuits to rest for about 5 minutes, then drizzle the vanilla glaze across the top of the biscuits and serve.
