Thin and Chewy Chocolate Chip Cookies

My favorite type of chocolate chip cookies are those that are Thin, Chewy, and slightly crispy. If you like those as well, then you will love these!

Notes:

•For best recipe accuracy I recommend weighing the flour and sugar in grams on a food scale.

•Fluff the flour before measuring.

INGREDIENTS

  • 1 cup (2 sticks/226g) Unsalted Butter, melted and cooled

  • 210g Light Brown Sugar, packed (about 1 cup)

  • 100g Granulated Sugar, (about ½ cup)

  • 1 Large Egg, room temperature

  • 1 Egg Yolk, room temperature

  • 2 tsp Pure Vanilla Extract

  • 240g Unbleached All-Purpose Flour, (about 2 cups)

  • 1 tsp Baking Soda

  • ½ tsp Fine Sea Salt

  • 4 oz Semi-Sweet Chocolate Bar, chopped

  • 4 oz Semi-Sweet Chocolate Morsels

Recommended Equipment 

•Parchment Paper or Silicone Baking Mat

•Baking Sheet Pan

INSTRUCTIONS

  1. In a large mixing bowl, add in melted and cooled butter, light brown sugar, and granulated sugar. Whisk ingredients together well until the butter and sugar, about 2 minutes.

  2. Next, add in the large egg, egg yolk, and vanilla. Whisk ingredients well until fully combined and smooth.

  3. In a separate large bowl, sift in flour. Then, add in baking soda and salt.

  4. Combine the flour mixture with the first bowl by adding in about ½ cup (about 50g) at a time. Use a wooden spatula to mix until fully combined. Be sure to not overmix.

  5. Add in chocolate morsels and the chopped chocolate bar, then mix well. Cover the bowl and refrigerate for at least 2 hours.

  6. Preheat the oven to 350Fº.

  7. Line a baking sheet with parchment paper or a silicone baking mat. Scoop out dough with an ice cream scooper or at least 3 tablespoons worth of dough and place on the baking sheet about 1-inch apart. I recommend baking 4 at a time.

  8. Place in the oven and bake for 11-13 minutes, or until the cookies appear golden brown in color. The outer edge of the cookie may appear slightly darker than the middle, this is ok.

  9. Once done baking, let the cookies cool for about 10 minutes in order for the cookies to set and slightly cool off. The cookies will appear slightly under-baked when you remove them from the oven, this is ok as the center will finish setting as the cookies cool down.
