BBQ Chicken Skewers


Ingredients

  • 2 Pounds Boneless Skinless Chicken Thighs, sliced into 1-inch pieces

  • ⅓ Cup Olive Oil, for seasoning chicken

  • 1 ½ Teaspoons Kosher Salt

  • 2 Teaspoons Black Pepper

  • 2 Teaspoons Garlic Powder

  • 2 Teaspoons Smoked Paprika

  • 2 Teaspoons Italian Seasoning

  • 1 Teaspoon Cumin

  • Pinch of Cayenne Pepper, optional

  • 2 Tablespoons Light Brown Sugar

  • 1 Cup BBQ Sauce






Instructions


1. Clean and pat chicken thighs dry. Trim off excess fat and slice into 1-inch pieces.


2. For marinade, in a bowl, combine and mix olive oil, salt, black pepper, garlic powder, smoked paprika, Italian seasoning, cumin, cayenne pepper, and brown sugar.


3. Add chicken thigh pieces to spice mix marinade and fully coat chicken with marinade. Refrigerate for at least 30 minutes to 1 hour.


4. Optional, if you are using wood skewers, I recommend soaking wood skewers in water as this can help prevent them from burning in the oven. Wood skewers may still slightly darken in color, which is ok. Be sure to keep an eye on them while they are in the oven.


5. Assemble skewers by evenly distributing chicken on each skewer.


6. Preheat the oven to high broil.


7. Line a baking sheet pan with foil and place an oven rack on top. Lightly coat the oven cooking rack with oil and place chicken skewers on top of the oven cooking rack. Place the pan in the oven in about the middle (about 6-inches away from the top broiler) and broil for 5-7 minutes on each side to cook.


8. After cooking the chicken skewers on each side, remove them from the oven and brush the chicken with bbq sauce all over. Return chicken to the oven and broil for another 2-3 minutes on each side to caramelize sauce.
