When looking for a cozy fall soup, one of my favorites to have is Broccoli & Cheddar. This Broccoli & Cheddar Soup is rich, creamy, and cheesy. During soup season when you desire something warm and cozy, this is a soup that is simple to make and sure to keep you warm inside.

Broccoli & Cheddar Soup
Ingredients
6 tablespoons Unsalted Butter
½ medium Yellow Onion, diced; up to 1 whole onion
2 Cloves Garlic, minced
½ cup All-Purpose Flour
2 cups Whole Milk
2 cups Chicken Stock
½ cup Heavy Cream
3 cups Fresh Broccoli Florets
3 cups Sharp Cheddar Cheese, shredded
⅓ Cup Parmesan Cheese, shredded or more to taste
Kosher Salt, to taste
Black Pepper, to taste
Matchstick Carrots, optional
Instructions
1. In a large pot, melt butter over medium-heat. Once the butter is melted, add in diced onions and cook down for about 4-5 minutes until onions are softened, stirring frequently.
2. Add in minced garlic and cook for about 1 minute. Next, add in flour and stir frequently for about 1 minute until flour is absorbed.
3. Pour in milk and chicken stock. Frequently stir and bring to a simmer. Once it begins to thicken, reduce heat to low, add in broccoli and stir in. Cook until broccoli for 6-8 minutes until tender.
4. Remove from heat and add in heavy cream, stir in. Add in cheddar cheese and parmesan cheese and stir until melted. Season with salt and black pepper to taste. Allow soup to cool for a couple of minutes to continue to thicken, then serve and enjoy.
