Chicken Bacon Ranch Flatbread Pizza
Ingredients
1 Pound Chicken Breast, cut into chunks
3 Tablespoons Olive Oil, for chicken seasoning
1 Teaspoon Kosher Salt, for chicken seasoning
1 Teaspoon Black Pepper, for chicken seasoning
1 Teaspoon Garlic Powder, for chicken seasoning
1 Teaspoon Smoked Paprika, for chicken seasoning
1 Teaspoon Italian Seasoning, for chicken seasoning
2 Tablespoons Olive Oil, for cooking
1 Pound Bacon, of choice, chopped
2 Flatbreads ( I used "Brooklyn Bred Pizza Crust Thin Traditional Lite" )
1 Cup Ranch Dressing, divided
8 oz Monterey Jack Cheese, freshly grated, divided
8 oz Mozzarella Cheese, freshly grated, divided
Green Onion, sliced
Instructions
1. Preheat the oven to 425 F.
2. Clean and pat chicken dry, then slice into chunk size pieces.
3. For chicken seasoning. In a bowl, combine olive oil, salt, black pepper, garlic powder, and smoked paprika. Mix all ingredients well together, then add in chicken and fully coat chicken pieces in the spice mix.
4. In a skillet on medium-high heat, add in 2 tablespoons of oil. Once oil is hot, add in chopped bacon. Cook bacon for about 2-3 minutes or until bacon is cooked and crispy, then remove from the skillet and set aside.
5. In the same skillet that was used to cook the bacon, add in chicken. Cook chicken for about 2-3 minutes on each side or until it is cooked all the way through (internal temperature 165F). The chicken will cook relatively fast.
6. On each of our flatbread pieces, add ½ cup of ranch dressing or as much as desired, and spread out evenly. Sprinkle on 4 oz (½ cup each) of monterey jack and mozzarella cheese on our flatbreads. Then, add half of our cooked chicken and bacon on each of the flatbreads.
7. Place our flatbreads on a parchment lined baking sheet and bake for about 15 minutes or until the cheese is melted, slightly browned, and bubbly.
8. Once done, you can drizzle on additional ranch dressing and top with sliced green onions.
