Loaded Broccoli & Cheese Potato Boats


Ingredients

  • 4 Large Russet Potatoes

  • 2 Tablespoons Olive Oil, for baking potato

  • Kosher Salt, for baking potato

  • ½ Pound Steamed Broccoli

  • ½ Cup Unsalted Butter, melted

  • 1 Teaspoon Kosher Salt, or to taste

  • 1 Teaspoon Black Pepper, or to taste

  • 1 Teaspoon Garlic Powder, or to taste

  • ½ Cup Heavy Cream

  • ¼ Cup Sour Cream

  • 8 oz Sharp Cheddar Cheese, divided

  • 8 oz Colby Jack Cheese, divided

  • ¼ Cup Chives

  • Smoked Paprika




Instructions


1. Preheat oven to 350 F


2. Clean & Pat Dry Potatoes


3. Place potatoes on a lined baking sheet. Lightly coat each potato with oil and lightly sprinkle salt on each potato.


4. Bake for 1 to 1 ½ hours or until potatoes are done.


5. Slice a then layer off the top of each potato and remove the inside potato filling and add to a bowl. Leave some of the potato inside the skin to maintain the structure of the potatoes.


6. With potatoes in a bowl, add butter, salt, black pepper, garlic powder, heavy cream, sour cream, 6 oz cheddar cheese, 6 oz colby jack cheese, broccoli and chives. Mix everything well.


7. Add filling back into each potato, then add the remainder of cheese on top. Sprinkle smoked paprika on top and bake at 375 F for 15-20 minutes.
