Spinach & Cheese Frittatas

Ingredients

  • 8 Large Eggs

  • ¼ Cup Heavy Cream

  • Kosher Salt, to taste

  • Black Pepper, to taste

  • ½ Yellow Onion, diced

  • ½ Cup Grape Tomatoes, diced

  • 1 Pound Beef Bacon, chopped

  • 1 Cup Baby Spinach

  • ¼ Cup Sharp Cheddar Cheese, grated

  • ¼ Cup Monterey Jack Cheese, grated


Recommended Equipment

  • Iron Wedge Skillet, or cast iron skillet


Notes

  • Feel free to customize with different meat proteins, vegetables, and cheeses.


Instructions


1. Preheat the oven to 350 F.


2. In a skillet on medium heat, spray a light coating of cooking spray. Next, add in bacon slices and cook in batches so that each piece is spaced evenly in the skillet. Cook on both sides for a couple of minutes until crispy then set aside on a paper towel to absorb grease. Allow the bacon to cool down slightly, then chop into desired sized pieces.


3. In a large bowl, add in egg yolks and whisk until combined. Sprinkle in salt and black pepper to taste, along with heavy cream and whisk in.


4. Dice yellow onion and grape tomatoes and add into the bowl along with the chopped bacon and spinach.


5. Lightly coat an iron wedge skillet or baking pan of choice with cooking spray.


6. Add in egg mixture, then add in grated cheese.


7. Place in the oven and bake for 25-30 minutes or until baked thoroughly. 


8. Once done baking, allow to cool down for about 2-3 minutes before serving.
